Ingredients

4 tbsps olive oil
3 lbs fresh tomatoes I used about 8 vine-ripened tomatoes, but you could use heirloom, plum, or any other kind of tomato you like
4 cloves garlic peeled and roughly chopped
1/2 yellow onion diced
4 tbsps fresh basil chopped
2 tbsps fresh oregano chopped
1 cup water as needed
1 pinch sugar optional, to round out the flavor if your tomatoes aren’t sweet enough
2 slices crusty bread I used sourdough, but use what you like
2 tbsps basil pesto sauce fresh, recipe here
1 slice sharp cheddar cheese or another cheese you like
1 tbsp butter for the bread and the pan
