4 potatoes large, peeled and boiled, about 3-4 cups mashed
1 cup carrots finely chopped or grated
1 cup minced onion or finely chopped
1 bell pepper finely minced
2 cups zucchini grated
3 green chilies finely minced
1 tbsp fresh ginger grated
3 cloves garlic grated
1 tbsp cumin seed crushed with mortar and pestle
2 tsps curry powder I used McCormick Brand
2 tsps lime juice
2 tsps fresh mint minced
15 curry leaves minced
salt to taste
black pepper to taste... I put a good amount of black pepper
1 eggs with water for egg wash
bread crumbs as needed for dredging
canola oil needed to fry
