5 tomatoes large yellow, or use whatever type of vine-ripened tomatoes are available
1 cup roasted red peppers coarsely chopped
2 tbsps feta cheese crumbles I always use my favorite feta
2 tbsps olive oil
2 tsps fresh lemon juice could also use balsamic vinegar, but I love the combination of lemon with mint
