Ingredients

400 grams skinless chicken breasts cut into fairly thin strips
olive oil splash of, to fry these in
1 purple onion finely sliced
400 grams tomatoes tin of, whole or chopped
1 tbsp chipotles in adobo finely chopped, or substitute with finely chopped pickled jalapeno chillis and a pinch of dried chilli flakes
1/2 tsp cumin
1 pinch brown sugar
lettuce leaves to make your tacos, I like to use butter lettuce or baby gem lettuce
chillies sliced pickled jalapeno
1 slice avocado or make a guacamole
1 slice spring onions
lime wedges to spritz
