Ingredients

2 large eggs at room temperature
vegetable oil Enough, to reach a depth of 1/4-inch
1 cup green leaf lettuce lightly-packed torn, approximately 2-inch pieces
1/4 cup yellow onion thinly sliced
1/4 cup carrots thin or julienned, strips
1/4 cup chopped celery coarsely, Chinese or other, include leaves
1/4 cup chopped cilantro lightly packed coarsely, thin stems and leaves
1 1/2 tbsps lime juice Key limes are recommended, but don’t fuss if you can’t find them
