Ingredients

2 tbsps canola oil
1 tbsp curry paste red or green Thai Kitchen, hot or mild, to taste, start with less if you prefer it mild
1 tbsp fresh ginger grated
1 purple onion sliced or diced, as you like it
4 cloves garlic minced
2 1/2 cups chicken pieces- if using raw chicken, take proper handling precautions
1 red bell pepper large, cored, sliced thinly
2 carrots medium, cut into matchsticks
2 cups shredded cabbage thinly, save time and use bagged slaw
4 1/2 tbsps smooth natural peanut butter sugar-free, of course
1 tbsp wheat free Tamari sauce or balsamic vinegar for soy-free
1 pinch red pepper flakes spicy, for extra heat, to taste
