1 sweet onion large, chopped, or two mediums
4 japanese eggplants cut into cubes, or 2 globe eggplants
2 cups mushrooms Baby Bella, sliced
1 bell pepper large, any color, cored, seeded, chopped
14 ozs tomatoes fire roasted, I chose Muir Glen with green chiles for extra heat
1/2 cup broth light
1/2 cup black olives or green, sliced
2 1/2 tbsps chopped parsley
1 1/2 tsps dried basil
1 1/2 tsps herbs dried Italian, marjoram, thyme, oregano, rosemary
polenta Cooked, make your own polenta- see below; or use a pre-made roll of your favorite organic polenta
1 bag baby greens crisp
balsamic vinegar Extra virgin olive oil and
crumbles Optional garnish:, goat cheese
1 cup polenta Bob's Red Mill
4 1/2 cups broth light
1 can grating cheese or also add chopped fresh herbs, or non-dairy cheese, such as Daiya Italian style, f desired.
