Ingredients

8 cups homemade turkey stock or homemade chicken stock or low sodium chicken broth in a can
1/2 tsp dried thyme
ground black pepper fresh-, to taste
1 tbsp base Penzeys or Better than Bouillon Turkey Soup, optional, The soup base is fairly salty so it's important to use low-sodium stock if you're using it.
1 1/2 cups chopped onion chopped small
1 1/2 cups chopped celery chopped small
1 1/2 cups carrots chopped, preferably organic carrots that don't need to be peeled, chopped small
3 1/2 cups cooked turkey diced, or chicken, cut a little larger than the vegetables
2 1/2 handfuls spinach leaves about 3 oz.
2 tbsps lemon juice fresh-squeezed, I used my fresh-frozen lemon juice
