1 1/2 lbs zucchini
2 tbsps olive oil
1 lb turkey 4 links, chicken or pork Italian sausage, I used turkey sweet Italian sausage
3 tbsps mint chopped
herbs Or use any combination of chopped, that appeals to you
1/3 cup pitted kalamata olives cut in half
1 tbsp capers or more, next time I'd use at least 2 T, capers can be rinsed if you wish, but I didn't rinse them
1 lemon about 2 T lemon juice
