2 cups cooked brown rice I like Uncle Ben's Brown Rice
2 tsps olive oil or more, depending on your pan
1 onion finely chopped
12 ozs mushrooms chopped small, I used brown Crimini mushrooms, also called Baby Bellas
3 tsps greek seasoning any brand, but I love Greektown Billygoat Seasoning from The Spice House
ground black pepper fresh, to taste
