Ingredients

8 ozs tilapia fillets sliced thinly on the diagonal
1/2 tsp corn starch
1 tsp light soy sauce ????
1/4 tsp sesame oil
1/4 tsp salt
1/8 tsp white pepper
2 tbsps oil
2 ginger thinly sliced
fresh shiitake mushrooms A handful of sliced, reconstituted dried shiitakes are also fine
6 red chili peppers dried, optional, but they certainly add some nice heat
1 handful soybean sprouts mung bean sprouts will also work
4 cups chicken stock good
1 1/2 cups water fresh
napa cabbage A handful of cut
1/2 block firm tofu sliced into 1/2-inch thick slices
1/2 tsp sesame oil
salt to taste
scallions Chopped
