1/4 cup soy sauce low-sodium is best here
1/4 cup chinese rice wine or sake
1 tbsp peeled fresh ginger finely chopped
1 tsp chopped garlic finely

3 tbsps peeled fresh ginger finely grated
1 jalapeno chilies large fresh, seeded and minced
8 ozs bean threads very thin, also known as cellophane, glass, or mung bean noodles
3/4 lb long beans Chinese, 1 bunch or green beans, trimmed and cut into 3-inch pieces
1 seedless cucumber usually plastic-wrapped; about 1 lb, halved lengthwise and sliced diagonally 1/8 inch thick
1 bunch scallions cut into matchsticks
1 mango firm-ripe, peeled, pitted, and thinly sliced
2 carrots thin, cut into 1/8-inch-thick matchsticks
1/2 cup coriander leaf loosely packed fresh
1/2 cup mint leaves loosely packed fresh
1/2 cup basil leaves loosely packed fresh small
