6 tomatoes large ripe, peel skin off tomato first
1 onion medium, chopped
2 green chilies chopped
4 cups chicken stock low sodium
4 garlic grated
1/2 in ginger grated
4 tbsps fish sauce as needed for salt flavor
2 tsps curry powder I used McCormick brand
1 tsp brown sugar to taste and depending on how sweet your tomatoes are naturally
15 ozs coconut milk
1/2 cup thai basil
lime wedges at the table for anyone who wants a squeeze of it.
