Ingredients

3 tsps sesame oil divided
1 tbsp olive oil light flavor
3/4 cup onion thinly sliced
2 carrots medium size, very thinly sliced into 2" matchsticks
2 cloves garlic minced
3 stalks green onions cut into 1" lengths
1/2 cup crimini mushrooms or thinly sliced baby bella
1/2 lb spinach washed and drained well, I used a large bunch of Japanese spinach, stems removed and chopped bite size. Baby spinach leaves would work as well.
3 tbsps soy sauce
3 tsps sugar
1 tbsp sesame seeds
