4 whole cloves optional, but good if you have them
4 whole cardamom pods optional, but good if you have them
1 tbsp duck fat or ghee, coconut oil, or your favorite fat
2 cups chicken stock preferably homemade
2 tbsps butter or ghee, optional, but gives a nice richness to the sauce
