Ingredients

2 onion large, chopped, I use a food processor
1 red bell pepper large, chopped
1 green bell pepper large, chopped
6 cloves garlic minced
5 cups black-eyed peas or 2 1/2 cups (1 pound) dried peas, soaked overnight and drained
2 1/2 tbsps chili powder mild
1 tbsp cocoa powder
2 tsps ground cumin
1/2 tsp ground chipotle chile pepper red pepper, or hot smoked paprika, adjust to taste
30 ozs tomatoes with juice diced, fire-roasted preferred
1 1/2 cups frozen corn or fresh
1/3 cup quinoa uncooked, rinsed
1 wedge lime and slices of avocado, to serve
