1 yellow onion large, chopped small
4 red potato large, about 1 1/2 lbs, diced very small, about 1/4" pieces
4 eggs hard-boiled, peeled and roughly chopped
6 ozs smoked salmon broken into flakes
3 tbsps sour cream
2 tsps horseradish
1/2 tsp dill weed
1 green onions sliced thin, about 2 tablespoons
1 tbsp fresh parsley minced
kosher salt to taste
cracked black pepper freshly, . to taste
lemon slices Optional:, for serving, not really optional, I loved the lemon here!
