Ingredients

3 lbs chicken I usually use dark meat, but a mix of both or even just white meat works as well
1 onion small, chopped small
1 orange bell pepper diced small
1 tbsp butter oil
7 ozs green chile chopped
28 ozs enchilada sauce green chile, a store-bought sauce is fine
1/2 cup sour cream
1 1/2 cups beans cooked, or 1 can, drained, I've used pinto, black and great northern
8 ozs jack cheese Monterrey, shredded
8 ozs pepper jack shredded
1 tsp granulated garlic or garlic powder
1 tsp cumin
kosher salt to taste
ground black pepper freshly, to taste
fresh cilantro Optional:, chopped for garnish and sour cream for topping
