Ingredients

1/2 lb dried rice noodles narrow
2 ozs pork boneless, thinly sliced and cut into narrow strips about 1 1/2 inches long
1 tsp sugar preferably palm sugar although light brown or granulated will work just fine
1 tbsp tamarind
3 tbsps warm water
1 tbsp soy sauce
1 tbsp fish sauce
1 pinch salt
3 tbsps peanut oil or mild vegetable oil
3 cloves garlic minced
3 ozs firm tofu cut into narrow strips about 1 1/2 inches long
1/2 lb beansprouts a scant 4 cups, rinsed and drained
3 scallions trimmed, smashed with the flat side of a knife and cut into 1 1/2-inch lengths
1 tbsp dried shrimp optional
1 tbsp radishes salted, optional
1 cup roasted peanuts coarsely chopped
4 tbsps coriander leaf optional
sauce Chile-Vinegar
1 lime cut into small wedges
