Ingredients

1 in ginger nub of, grated or finely chopped, grate it on a Microplane and you won’t have to peel it!
3 cloves garlic pressed
2 tbsps rice vinegar
1/4 cup peanut oil quality, olive oil or vegetable oil
2 1/2 tsps soy sauce or reduced-sodium tamari
1/2 tsp agave nectar
1 watercress big bunch, very roughly chopped
1 orange bell pepper or yellow, chopped
2 1/2 stalks celery thinly sliced and roughly chopped
1/4 cup green onions chopped, include both white and green parts
1 1/2 cups edamame shelled, I used frozen
1 1/2 cups wild rice or cooked forbidden rice, use 3/4 cup rice to 1 1/2 cup water
