1 pickled onion recipe follows

1 head radicchio washed well and chopped
3/4 cup dried tomatoes packed in oil, drained and chopped, save the oil!
1 can white beans drained and rinsed
3/4 cup white vinegar
2 tbsps sugar
1/2 tsp salt
10 whole clove
1 pepper small dried
1 onions large, sliced thinly
1 lemon juiced
1 tbsp mustard
2 tbsps extra-virgin olive oil use the oil from the dried tomatoes
2 garlic cloves minced
2 tbsps capers drained and rinsed
3 tbsps fresh herbs like rosemary, oregano, thyme, parsley, tarragon, chives
