Ingredients

1 lb boneless skinless chicken breasts or tenderloins, frozen or refrigerated
10 ozs enchilada sauce good-quality mild
1 onions medium, chopped
4 ozs chile pepper chopped green
10 ozs frozen corn or 1 can of whole-kernel corn, drained
15 ozs black beans drained, optional
2 cloves garlic minced
1 cup water
1 tsp cumin
1/2 tsp chili powder
1 tbsp lime juice optional
2 tbsps fresh cilantro chopped
3 tbsps olive oil
avocado slices
cheddar cheese or shredded Mexican
tortillas soft, you can place these in the bottom of the bowls, and ladle the soup on top if you'd like!
