Ingredients

2 tsps olive oil
1 onions large, chopped
3 bell pepper seeded and chopped, any color
1 jalapeno chilies chopped, optional
2 lbs ground turkey can also use lean ground beef
2 cups butternut squash chopped raw, or pumpkin
28 ozs diced tomatoes drained
15 ozs pumpkin purée 100%, not pumpkin pie mix
3 cups canned beans mixed, rinsed and drained, kidney, garbanzo, pinto, black, etc.
1 1/2 tsps pumpkin pie spice or to taste
2 tbsps chili powder I used 1 tablespoon + 1 teaspoon
1 tbsp cumin
1 tsp kosher salt or to taste
hot sauce to taste, optional
4 cups cooked brown rice or quinoa, or as desired
shredded cheddar cheese or a “Mexican mix”
