3/4 tsp xanthan gum omit if your blend already contains it
1/4 cup unsweetened cocoa powder natural or Dutch-processed

1/4 tsp kosher salt
1 cup sugar
2/3 cup sour cream at room temperature, can also use Greek-style plain yogurt
2 eggs 120 g, weighed out of shell at room temperature, beaten
