7 tbsps butter divided, plus more as desired, see note in post about the 4 tablespoons of butter that I use to brush the phyllo
3 tbsps olive oil divided
1 onions large, finely chopped, about 2 cups
1 bunch kale cleaned, trimmed and shredded, about 10 loosely packed cups
1/2 cup fresh dill chopped
1/2 cup scallions chopped, about 6 scallions
1/4 cup water
salt to taste
1 1/2 cups feta cheese crumbles about 1/2 a pound
16 ozs phyllo defrosted according to package instructions, you’ll only need about 1/2 of the package
