1 shallots large, finely chopped
15 roma tomatoes or San Marzano, coarsely chopped
1 tsp salt
2 balsamic vinegar quick pours of, or to taste
1 tsp sugar this is optional...I used organic sugar; if you happen to keep vanilla sugar or rosemary sugar on hand, either of these would make a delicious additions
15 leaves fresh basil
