Ingredients

3/4 cup raw cashews soaked
6 cups vegetable broth divided
3 cloves garlic minced
1 yellow onion or sweet, diced
3 carrots medium, peeled and chopped
1 red bell pepper chopped
1 1/2 cups sweet potatoes peeled and chopped, regular potato, or butternut squash
2 stalks celery chopped
28 ozs diced tomatoes with their juices, or sub with fresh tomatoes - see blog post for my how-to
1 1/2 tbsps spices Homemade 10-, Blend, recipe follows, to taste
2 cups baby spinach or destemmed torn kale leaves
15 ozs garbanzo or other beans, drained and rinsed, kidney beans are fun too
1 tbsp onion powder
1 tbsp dried basil
2 tsps dried thyme
1 1/2 tsps ground black pepper freshly
1 1/2 tsps fine sea salt
1 tsp white pepper optional
