50 ml vegetable oil or ghee
3 cloves garlic – smashed in their skins
1 in ginger piece of, – finely sliced
1 in carrots – peeled and chopped
1/4 cup shredded cabbage optional
1/4 red bell pepper – diced
2 tomatoes – finely chopped
1 tbsp ghee
1 pinch tumeric
1 tsp coriander powder
1 tsp fenugreek seeds ground
salt and pepper to taste, I usually leave this out and simply add it to the final dish
