Ingredients

1 cup long grain brown rice I used Uncle Ben's Brown Rice, but any long-grain rice will work.
4 green bell pepper large, bottom trimmed, cap end cut off and diced, and seeds removed
1 onion large, diced
2 tsps olive oil
2 sweet italian sausage links, about 8 ounces turkey, or other sausage of your choice. Use diced mushrooms instead of sausage for vegetarian version.
1/2 tsp ground fennel
1/2 tsp oregano dried Greek or Turkish
1/4 cup mozzarella cheese grated
