1/2 head red cabbage
1 bunch green onions
1 yellow bell pepper each red and
1 mushrooms serving marinated, see below
3 handfuls mung bean sprouts
1 bunch cilantro reserve a little for garnish
sauce Raw Pad Thai, see below
black sesame seeds or almonds, pumpkin seeds, cashews etc.
lime wedges for serving
1 lb mushrooms your choice, I used shiitake
2 tbsps maple syrup
2 tbsps olive oil cold-pressed
1 1/2 cups cashew nuts soaked
1 in ginger root peeled
1 clove garlic
1/2 red chili peppers seeds removed
1 tbsp maple syrup
1 1/2 tbsps tamari soy sauce
2 lime
1 tbsp olive oil cold-pressed
2 cups water or as needed
