2 carrots large, peeled, sliced in half and then cut into half moon chunks
2 parsnips peeled, quartered and sliced into 2 inch long bits

10 floz beef stock
bouquet garni see note below
5 floz red wine good
black pepper salt and
1 tbsp flat leaf parsley chopped, to garnish at the end
4 ozs self raising flour plus extra for shaping, 1 cup
2 ozs suet shredded, about 1/4 cup heaped
1 tbsp fresh parsley chopped
4 tbsps cold water
