1 cup sweet rice flour glutinous, sometimes called
105 grams white rice flour 3/4 cup + 1 tablespoon superfine
100 grams teff flour 1/2 cup + 1 tablespoon
70 grams superfine brown rice flour 1/4 cup + 3 tablespoons
35 grams almond meal or almond flour
60 grams unsalted butter cold
150 ml cold water
