1 tbsp extra-virgin olive oil or oil of choice
2 cups black-eyed peas uncooked
1 onion large, diced
1 tsp ginger root minced, or more to taste
3 cloves garlic minced
1 tsp tumeric
3 cups diced tomatoes canned, approx one 28oz can
2 tsps garam masala to taste, I use Arvinda’s
2 tsps sugar or to taste
1 1/2 tsps salt or to taste
chopped parsley or cilantro, to garnish
rice or bread, for serving
