2 tsps cumin
1 tbsp coriander
2 tsps tumeric
1/2 tsp salt
1/8 tsp cayenne or to taste
5 cloves garlic minced
2 tbsps fresh ginger minced
2 onions large, cut into chunks
3 carrots peeled and cut into chunks
2 eggplant medium, cut into chunks, peel if desired
8 dried apricot unsweetened, sulfite-free preferred
4 sprigs fresh rosemary
1/2 cup red wine
1/2 cup pomegranate juice 100%
3 cups whole wheat couscous cooked, brown rice or quinoa
2 tbsps pistachios roughly chopped
2 tbsps flat leaf parsley chopped
