2 shallots small, chopped
4 cups vegetables seasonal, I used carrots, peas, radishes
2 cups dark leafy greens hearty, I used rainbow swiss chard but kale works nicely too
1 apples core*, optional
1 parmesan cheese rind*, optional
3 stems fresh parsley *, or whatever herbs you have
16 ozs ricotta
1 eggs
1/2 cup parmesan cheese grated
1 tsp salt
1 tbsp fresh herbs chopped, I used thyme, basil and parsley
1/2 cup whole wheat flour white
