1 lb boneless chicken skinless thigh cut into 1/2" - 3/4" pieces
10 red chili peppers dried, de-seeded and split in half lengthwise, I used 8 and it was plenty of heat for us.
3 tbsps olive oil light flavor, or coconut oil
1 in fresh ginger cut into matchsticks
2 cloves garlic sliced very thin
1 stalk scallions or green onion, sliced thin
1 tbsp arrowroot or cornstarch
2 tsps soy sauce
1 tbsp rice wine
1 tsp olive oil light flavor
1 1/2 tbsps light soy sauce
1 tsp sugar
1/4 tsp black vinegar or balsamic vinegar
2 tbsps water
1 tsp arrowroot or cornstarch
