1 vidalia onion small, or other sweet onion, chopped
3/4 lb cherry tomatoes about 1 1/2 pints, halved

1 tbsp sherry vinegar plus more to taste
1/4 cup fresh basil leaves packed small, I used less
1/4 cup rocket leaves packed small fresh, I used more
1 garlic cloves peeled and halved
1 crusty bread round loaf
