1 purple onion or medium yellow, diced
2 cloves garlic finely minced
1 red pepper or green, diced small
1 can black beans rinsed and drained
10 ozs frozen chopped spinach defrosted and liquid squeezed out, wringing through a kitchen towel works great
1 tsp cumin
1/4 cup chopped cilantro freshly
1/2 tsp salt
1/2 tsp pepper
2 1/2 cups cheese shredded, such as Monterey Jack, Pepper Jack or Cheddar
19 flour tortillas small, fajita-size
1 cup sour cream
1/4 cup salsa
1 tsp chipotles in adobo minced, if you are opening a new can to only use 1 teaspoon, freeze the remainder in a freezer-safe ziploc bag and pull out and thaw as needed
