3 russet potatoes pouds, chopped and placed in a bowl of cold water
3 tbsps oil
1/2 purple onion small, finely diced
2 cloves garlic finely chopped
1 plum tomatoes large, or two campari tomatoes, halved and seeded and roasted in 400 degree oven for about 5 minutes
3 dashes hot pepper sauce like Tabasco, add more if you like it spicy
balsamic vinegar splash of
chopped parsley for garnish
