3 carrots washed & chopped into 1/4″ pieces
2 stalks celery washed & chopped into 1/4″ pieces
1 leeks trimmed, washed and chopped
1 tbsp fresh thyme
1/2 tsp salt
2 1/2 cups cooked turkey or chicken meat
3 1/2 ozs mushrooms washed and chopped, I like using chanterelles
1/2 cup white wine you can substitute broth
2 1/2 cups milk divided
1/4 cup flour
1/2 lemon
2 sheets frozen pastry puff sheets or approximately 16 ounces, thawed
1 eggs lightly beaten
