Ingredients

8 vidalia onion or medium-sized white, yellow
2 tbsps olive oil for brushing onions
1 tsp fresh rosemary finely minced, or use 1/2 tsp. dried rosemary, finely chopped with large knife
2 tbsps fresh thyme leaves minced, or use 1 T dried thyme
6 tbsps mayonnaise I used 4 T light mayo and 2 T full-fat mayo
1 tbsp lemon juice fresh squeezed
1/2 tsp dijon mustard
1 cup cheese lowfat pizza, any mild white cheese will work, but use low-fat cheese for the South Beach diet
3 tbsps pecorino romano cheese grated, or use grated parmesan
ground black pepper fresh, to taste
