1 1/2 tbsps extra-virgin olive oil I omitted this and used a little water in a non-stick pot
1 onion medium, finely chopped
8 baby carrots quartered lengthwise
2 cloves garlic minced
2 vegetable bouillon natural, salt-free, cubes
2 tsps curry powder good-quality
1 pinch cinnamon
1 pinch ground nutmeg
1/2 cup quinoa
16 ozs pink beans drained and rinsed, I used pintos
6 ozs baby spinach leaves well rinsed
freshly ground pepper Salt and, to taste
